A true gastronomic treasure, ready in moments. The farm Roots He prepared Zolfini beans, one of the most prized and sought-after varieties, according to the traditional "al fiasco" recipe. This slow and gentle cooking method, reproduced here by hand, gives the beans an unparalleled creaminess.
Grown organically, these beans (70%) are distinguished by their ultra-thin, almost nonexistent skin and their flesh that literally melts in your mouth. The dressing is a tribute to Tuscan simplicity: organic extra virgin olive oil, garlic, sage, and a pinch of pepper. Nothing else.

The Zolfino bean, so named for its pale yellow color reminiscent of sulfur, is a native Tuscan ecotype, grown primarily in the Pratomagno and Valdarno areas. Its main characteristic, besides its color, is its extremely thin skin, which makes it incredibly digestible and allows it to absorb seasonings perfectly.
Cooking "al fiasco" is the traditional method par excellence: the beans were placed in a glass flask with water, oil, garlic, and sage, and then slowly cooked in the hot ashes of the fireplace for hours. Radici revives this tradition, offering a product that captures the history and authentic flavor of this legendary legume.
Despite their buttery texture, zolfini beans are a healthy and nutritious food. Like all legumes, they are an excellent source of plant-based protein and fiber, which are essential for intestinal health and a prolonged feeling of satiety.
