Biofavole's Organic Tomato Passata is a masterpiece of varietal selection: obtained from a skillful blend of five noble organic tomato varieties—the intensely sweet Kero, the balanced Tales, the fleshy and fragrant Roma, the San Marzano DOP, the absolute king of sauce tomatoes, and the sweet, concentrated Datterino. The tomatoes are hand-picked at perfect ripeness in the family gardens of Ortezzano di Fermo, in the rolling hills of the Valdaso valley in the Marche region. They are then cooked, pureed, and deseeded, peeled, and dewatered to create a dense, velvety passata, intense in color and flavor. Washing, trimming, sorting, and packaging are all done entirely by hand by the company's laboratory staff in sterile, pasteurized containers. No added salt, acidifiers, or preservatives: this passata is safe even for children under 3 and those with hypertension.
 
 
 

The roots of this Tomato Passata are deep in tradition

The tomato arrived in Europe after the discovery of the New World in the 16th century, but it wasn't until 18th-century Naples that it became the undisputed protagonist of Italian cuisine, radically transforming the national gastronomy. "Tomato sauce" originated in Naples at the Bourbon court, and from there spread throughout the country, becoming the soul of sauces, ragùs, and pizzas. In the Italian countryside, preserving tomato puree was the quintessential end-of-summer collective ritual: entire families gathered in August for the "sauce"—the tomatoes were washed in wooden tubs, cooked in large copper pots, and poured into sealed bottles destined to brighten the winter. Pellegrino Artusi, in his 1891 masterpiece, dedicated glowing pages to the tomato, calling it "the king of vegetables." Biofavole inherits this traditional wisdom and translates it into a contemporary organic product that echoes the practices of the Marche grandmothers of yore.
