The practice of caramelizing hazelnuts is one of the oldest gestures of Mediterranean peasant confectionery: in the fairs and village markets of Lazio, Tuscany and Umbria, sincenineteenth century, “caramellizers” Street vendors prepared sugared hazelnuts on the spot in small copper pots, wrapped in paper cones, to sell to children. It was the most rustic and popular version of the praline French (whose invention is attributed to the chef Clément Lassagne in 1636(at the service of Marshal César du Plessis-Praslin), which take their name from the toasted and caramelized hazelnuts. Parano Bio is an organic farm in Vasanello (VT), in the heart of the Tuscia Viterbo area. Since 2017, it has been processing hazelnuts grown on its own groves in its in-house laboratory, using manual selection and roasting. Certified organic by CCPB (code BJ15) and VeganOK, it represents one of the most virtuous businesses in the Cimino-Vicano hazelnut growing district.
