Poggio Felicioso's Organic Fennel Roast is the elegant solution for those who want to bring a real roast to the table without turning on the oven: meat from pigs born and raised 100% free-range in the Tolfa mountains, seasoned with salt, pepper, and fennel, tied, and cooked slowly in the finest artisanal rotisserie tradition. The animals are raised free-range, fed organic, GMO-free feed, never treated with antibiotics, in a short, all-Italian, CCPB-certified supply chain. When cut, it is firm and pink, with the scent of fennel enveloping each slice: ready to be enjoyed cold, or reheated to recapture the warmth of a Sunday roast.
Roast pork with fennel has a moment of absolute glory in Italian history: it is said that during the Council of Florence in 1439, Greek prelates, tasting pork loin roasted with fennel, exclaimed "aristos!"—"the best!"—forever naming the dish that Tuscans still call arista.
