Just one ingredient: organic einkorn wheat. No oil, no yeast, no preservatives, not even salt, which is zero here. Einkorn wheat is the rarest and most precious of the three grains, and it's instantly recognizable in these crackers: the color tends toward golden, more intense than that of other grains, and the flavor is full, warm, with a sweet, buttery note that lingers in the mouth. The crunch is gentle, never overpowering. These are crackers that win over even those who usually find them bland, because here the grain has enough personality to stand alone: a drizzle of oil and they're already a meal.
Einkorn is the simplest wheat in existence, even from a genetic standpoint: it has fourteen chromosomes, while durum wheat has twenty-eight and common wheat forty-two. It has remained essentially as it was at the time of its domestication ten thousand years ago, without the subsequent natural crossbreeding that gave rise to modern wheats—which is why it is called the "ancestor" of all wheats. Its ear bears a single grain per spikelet, hence its name, and its yield is so low that for centuries it was grown only where nothing else would grow, in mountainous areas and poor soils. That genetic simplicity, however, has an interesting twist: einkorn is naturally richer in carotenoids—the pigments that give it its golden color—and has a different gluten composition than modern wheats, making it less tenacious and more fragile in baking.
It's salt-free, containing zero grams per 100g, a valuable detail for those looking to reduce their daily sodium intake. It contains 12g of protein, 6,4g of fiber, and 3,6g of fat—slightly higher than other crackers, due to the nature of einkorn, which is among the wheats richest in lipids and carotenoids. A single ingredient on the label means no additives, no added fat, and no surprises. Einkorn is still a wheat and contains gluten: it's not suitable for celiacs.

Store in a cool, dry place, away from light. After opening, reseal the package tightly or transfer the biscuits to an airtight container: moisture quickly compromises their crispiness. Since einkorn is a grain rich in fat, it's best to consume them by the indicated date and keep them away from heat sources. If they become soft, a few minutes in a hot oven will restore their crispiness.
