Poggio Felicioso Organic Cooked Ham restores dignity to Italy's most consumed cured meat: legs from pigs born and raised 100% free-range in the Tolfa mountains, artisanally processed with salt and only natural flavors, then slowly cooked to create a firm, moist, and delicately flavored slice. The animals are raised free-range, fed organic, GMO-free feed, never treated with antibiotics, in a short, entirely Italian, CCPB-certified supply chain. The sweetness here comes not from added sugars, but from the quality of the free-range meat: a cooked ham you recognize at first bite, from the butcher's counter straight to your table.
Cooking pork leg is an ancient art: Cato the Elder, in his De Agri Cultura from the 2nd century BC, precisely described how to salt and cook ham, while Apicius suggested boiling it with dried figs and bay leaves and then glazing it with honey—the first cooked ham recipe in history. From Roman banquets, this art passed to monastic kitchens and then to 19th-century delicatessens, until in the 20th century it became the deli meat of daily affection: the one in the afternoon sandwich, the Sunday tramezzino, the slice stolen from the counter. A two-thousand-year history that the Tolfa wild pig traces back to its artisanal origins.
Cooked ham is among the leanest and most digestible cured meats: slow cooking makes its complete proteins easily assimilated, making it suitable for the whole family, from children to athletes.
