Aquae proves that decaf doesn't have to mean sacrifice. It's made from a selection of organic Peruvian Arabica beans from the Chanchamayo region—a single origin, not a makeshift blend—decaffeinated using a natural water method, a process that removes caffeine without using chemical solvents and without diminishing the bean's aromatic richness. The result is a balanced and aromatic coffee, rounded in body, with a floral aroma and hints of honey and toasted almonds. The name says it all: water is the only ingredient, and what remains in the cup is the coffee that was there before.
Removing caffeine while preserving aroma is one of the most fascinating problems in food technology. The first methods, developed in the early twentieth century, relied on organic solvents; the water method, much more recent and delicate, works elegantly: the green beans are immersed in water, which extracts both the caffeine and the soluble aromatic compounds; this solution is then filtered through activated carbon, which retains only the caffeine molecules, and the remaining water—now saturated with aromas but devoid of caffeine—is reintroduced into contact with new beans. Unable to absorb other aromas, the beans release only the caffeine and preserve their aroma. No solvents, just a physical principle and a lot of patience. This is why Morettino also chooses this approach for its organic line: because it is consistent with a concept of coffee that does not involve shortcuts at any stage, from plantation to cup.
Smell: floral, delicate and elegant aroma, typical of the high-altitude Arabicas of the Chanchamayo valley.
Taste: soft and round, with accents of honey and toasted almonds, in a balance that gives in to neither acidity nor bitterness.
Since 1920, in Palermo, Morettino has practiced slow, eco-friendly roasting that respects the character of each origin. Four generations of roasters have selected their raw materials directly on the plantation, and have always combined quality with a commitment to education, through projects like the Coffee School and the Coffee Factory Museum.
Store the package tightly closed in a cool, dry place, away from light and strong-smelling foods: ground coffee easily absorbs odors. Avoid the refrigerator, where humidity and temperature fluctuations compromise the aroma. Once opened, consume within a few weeks to fully enjoy the floral bouquet.
