This is the most generous of Monteleone di Spoleto's blends: farro, the undisputed king at 40%, leads a procession of six mountain grains—barley, lentils, beans, grass peas, and chickpeas—all organically grown by Dolci Giuseppina at 1,000 meters above sea level. Fifty minutes of cooking transforms this small ark of biodiversity into a unique dish with a satisfying density, where each spoonful offers a different texture: the firm grain of farro, the creaminess of lentils, the rustic mellowness of grass peas and beans. With 12 grams of fiber and just 234 kcal per 100 grams, it proves that the most historically rich dishes can also be the lightest.
 
 
 

The roots of this soup are deep in tradition

The name preserves the memory of the most important day of the farming year: the threshing. When the threshing came, the farmyard transformed into a celebration of dust, sweat, and solidarity—families took turns helping each other, from farm to farm, and the housewife had the honorary duty: feeding the dozens of laborers. The best of the pantry, grains and legumes alike, was poured into the pot, creating thick, hearty soups that would restore strength to the men who had been handling sheaves since dawn. The threshing meal was a banquet, thanksgiving, and social pact all in one dish. This "trebua" soup is its declared heir: the richness of six seeds, as in the days when the generosity of the table measured gratitude for the harvest.

Dolci Giuseppina is a family-run farm in Monteleone di Spoleto, the highest municipality in Umbria. On land inherited from their grandparents, at about a thousand meters above sea level, the family grows the famous mountain spelt along with barley, ancient legumes, and saffron, using methods that preserve the soil's fertility and an authentic farming tradition passed down from generation to generation.
