The name isn't a whim: this soup is truly a one-pot meal, in the truest sense of the word. The blend combines three key ingredients from the mountain fields of Monteleone di Spoleto, all grown organically by Dolci Giuseppina: semi-pearled farro, thin-skinned Umbrian lentils, and hulled roveja, the rare wild pea with a bold flavor. Together, without soaking and cooked in 50 minutes, they create a dish with extraordinary nutritional value—20 g of protein and 10 g of fiber per 100 grams—where the grain and legumes complement each other even in flavor: the nutty sweetness of the farro, the creaminess of the lentils, and the rustic character of the roveja, which requires no sauces or flavorings to be memorable.
This blend tells the story of the shepherds of the Sibillini Mountains. For centuries, along the transhumance routes between Umbria and Marche, dinner was cooked in a single pot: grains and legumes together, everything the pack could contain, because on a campfire there was no room for multiple pots or time for multiple courses. It was the cuisine of "mescole," the seed mixes that each family composed according to the harvest. And among those seeds was roveja: the wild shepherd's pea, grown on the most inaccessible terraces, which in the twentieth century came close to extinction—surviving in a handful of fields between Cascia and Valnerina, guarded by families who refused to give up. Finding it in this soup means tasting a saved seed, in the dish that has always held it.
Modern nutrition has proven the shepherds right: combining grains and legumes in the same dish creates so-called protein complementarity—the amino acids missing from one are supplied by the other, creating complete proteins comparable to animal proteins. The result is exceptional: 20g of protein per 100g, as much as many main courses, with just 1,5g of fat. The 10g of fiber, including soluble fiber from lentils and roveja, supports satiety, regularity, and glycemic control, while roveja adds its traditional iron content. A unique dish in name and in fact: organic, mountain, and complete.
Dolci Giuseppina is a family-run farm in Monteleone di Spoleto, the highest municipality in Umbria. On land inherited from their grandparents, at about a thousand meters above sea level, the family grows the famous mountain spelt along with ancient legumes—including the rare roveja—and saffron, using methods that preserve the soil's fertility and an authentic farming tradition passed down from generation to generation.
