The Hokkaido squash takes its name from the Japanese island it originates from.

It is also called chestnut squash, potimarron or uchiki kuri or red kuri,

Description Hokkaido pumpkin

The fruit has the bright orange skin, it is pear or onion shaped, and usually reaches dimensions a small and weight of 1 kg or less.

This last feature makes the hokkaido squash convenient in the kitchen, because it can be prepared entirely without dividing it into pieces.

Furthermore, it is an earlier variety than others, with the first fruits ripening in August and the others continuing beyond.

The pulp of this chestnut squash is quite dry and allows for many culinary preparations.

You can also eat red kuri cooked in pieces in the oven without removing the skin but only washing it.

 

 

Why is squash a vegetable?

La "zucca" contains about 5-7 g. of carbohydrates on 100 g., therefore more or less those contained in carrots, making it de facto a vegetable real.

 

 

How many qualities of pumpkin are there?

there 500 varieties, which refer to 15 species, di which 5 edible: la "zucca" from vegetable garden or courgette (cucurbita pepo), the "zucca" giant (Cucurbita maxima), the "zucca" musky (cucurbita moschata), the "zucca" of Siam (cucurbita ficifolia) and the ayote (cucurbita argyrosperma).

 

How to tell if a pumpkin is good?

To know if it's a pumpkin it is mature it is necessary to check the petiole: if it is dry then the pumpkin is mature.

Another way to recognize a pumpkin ripe consists in touching the peel: if it is hard and unscratchable then we are in the presence of a pumpkin mature.

 

 

How long can a pumpkin keep?

72 hours

An once cut, the "zucca" may be preserved in the refrigerator, with or without peel, for up to 72 hours.

We just have to remember to cover the hulled side, that is the one we have already peeled, with a cling film, or place it in a food container to prevent si buckets.

 

How to store pumpkins for the winter?

Collect the pumpkins before the temperature gets lower than 12 degrees.

Avoiding exposing them to the sun and keeping them in a dry place, you can keep them until the end of thewinter.

It is important that the room is not humid and protected from direct sunlight.
