The small size of great soups: five millimeters that taste like home cooking

Five millimeters long and four millimeters in diameter: tubettini are the type of pasta you eat with a spoon rather than a fork, the kind used in thick soups and one-pot meals. Made from whole-wheat Senatore Cappelli durum wheat semolina, grown on the company's fields in Cerignola, ground thoroughly with the germ, bronze-drawn, and dried very slowly between 32 and 38°C. They have the natural color of whole wheat and a delightful flavor, with ancient and ancestral aromas, persistent and delicate notes of pleasant bitterness, and a good underlying savoriness, thanks to the wheat's cultivation near the salt pans of Margherita di Savoia. Cooking for just 8-10 minutes, they hold together perfectly and don't fall apart even in soup.
There is a Neapolitan dish called pasta and potatoes with provola cheese and that in the old version it was not made with a single format, but with the mixed pastaMixed pasta, that is, the bottoms of leftover sacks from the shops, broken pieces and different shapes sold cheaply to those who couldn't afford the whole package. The small tubes were the heart of those mixes, because they were small, hollow, and able to cook quickly alongside everything else. From that cuisine of necessity, some of the most beloved dishes of the South were born—pasta and beans, pasta and chickpeas, pasta and potatoes—and the small format has remained the perfect tool for a meal where pasta, legumes, and vegetables aren't simply combined but blend together in a single spoonful. In the whole-wheat version made with Cappelli wheat, that simple cuisine acquires a depth of flavor no one could once have imagined.
Furosine measures the thermal damage suffered by pasta during drying: the lower the value, the gentler the process and the more intact the nutritional value of the grain. It is the parameter that distinguishes slow, low-temperature drying from industrial, rapid, and much hotter drying methods.
With 14,4 g of protein and 8,33 g of fiber per 100 g, this pasta offers a balanced nutritional profile that is multiplied in the dishes it's used in: legume and vegetable soups are among the most complete and filling preparations in Mediterranean cuisine. Wheat bran fiber helps accelerate intestinal transit: this effect is achieved with at least 10 g of wheat bran fiber per day. Whole-grain milling with the germ results in a higher content of mono- and polyunsaturated fats compared to saturated fats, which represent just 19% of total fat, and salt is virtually absent.
