Unlike industrially produced mozzarella, this braided mozzarella is made exclusively with organic raw milk from a single milking on the family farm in Fiumicino. The choice of raw milk preserves the aromatic and microbiological richness of the raw material, giving the final product an intense, full-bodied, and unmistakable flavor.
The secret of its excellence lies in its slow and natural production process: the addition of the previous day's whey starter and the use of natural rennet allow the curd to slowly acidify under the whey. Subsequently, stretching and manual cutting give the braid its unique elastic, fibrous, and juicy texture.
