This dried thyme is an exceptional product, hand-harvested in the pristine mountains of South Tyrol, where the pure Alpine air and altitude imbue the aromatic plants with an unparalleled fragrance and concentration of essential oils. Certified organically grown by the Susi family in Bressanone, this thyme (Thymus vulgaris) is harvested during its peak balsamic season, between spring and summer, when the flowers have just opened and the plant releases its most intense aroma. Natural drying takes place slowly in the shade, preserving its sensory, therapeutic, and aromatic properties. The result is an herb with small, grayish-green leaves and a penetrating, warm, and slightly camphorated aroma, capable of transforming every dish into a sensory experience and bringing well-being to body and mind thanks to its extraordinary phytotherapeutic properties.

Thyme is an aromatic plant that combines Mediterranean and Alpine traditions. Known since ancient times, its name derives from the Greek "thymos" (courage, strength), as the ancient Greeks burned it in temples as an offering to the gods, and Roman soldiers used it to instill courage before battle. In the Middle Ages, ladies embroidered sprigs of thyme on knights' tunics as a symbol of valor. In South Tyrol, wild thyme, which grows in the mountains above 1500 meters, has long been used in Tyrolean folk medicine as a remedy for coughs, colds, and digestive disorders. Benedictine monks cultivated thyme in their medicinal gardens, passing down knowledge of its therapeutic properties. The Susi family at the Pflegerhof, a family-run organic mountain farm, continues this ancient herbal tradition with passion and respect for nature, harvesting herbs according to the rhythms of the seasons and the moon.
