Produced by Roncaglia—a Piedmontese farm that organically farms 40 hectares of land in Bricherasio, producing fruit, vegetables, and over 60 apple varieties according to a sustainable natural philosophy that prioritizes biodiversity, soil health, and organoleptic quality—this juice represents a very short, transparent supply chain, where pears harvested at optimal ripeness from the company's orchards are transformed on-site into ultra-fresh juice that preserves the fruit's exceptional organoleptic characteristics.

Production follows artisanal methods that respect the integrity of the fruit: the organically grown pears (without pesticides or synthetic chemical fertilizers) are harvested manually or mechanically at the peak of perfect ripeness, when the concentration of natural sugars, balanced acidity, and aromas are at their peak. They are then carefully washed, sorted, eliminating damaged or imperfect fruit, and pressed using a soft pressing technology (slow press or cold press), which uses gentle pressure and low temperatures to extract juice while preserving heat-sensitive enzymes, vitamins, antioxidants, and volatile aromas that would be degraded by the violent, high-temperature pressing typical of industrial processes. The resulting juice is briefly pasteurized at a controlled temperature to ensure microbiological preservation without aggressive sterilization, and then bottled.

The result is juice ranging in color from light straw yellow to golden beige (depending on the variety of pears used, the degree of ripeness, and the natural enzymatic oxidation that can slightly darken the juice without altering its quality – normal in juices not treated with chemical antioxidants).
