Produced by Roncaglia—a Piedmontese farm that organically farms 40 hectares of land, producing fruit and vegetables, and preserving over 60 apple varieties according to a sustainable natural philosophy that prioritizes biodiversity, soil health, and authentic organoleptic quality—this juice represents a very short, transparent supply chain, where apples harvested at optimal ripeness in the company's orchards are transformed on site into ultra-fresh juice that expresses the exceptional varietal characteristics of Piedmont's pomological heritage.

Production follows respectful artisanal methods: certified organic apples (grown without chemical pesticides, synthetic fungicides, chemical fertilizers, or herbicides, in accordance with European organic regulations that guarantee respect for the environment, biodiversity, and consumer health) are harvested manually or mechanically at perfect ripeness, when the balance of sugars, acidity, and aromas is optimal (apples picked too early are acidic and astringent, while overripe ones are cloyingly sweet and lack vibrancy).
