Organic spareribs (or pork ribs) are a specialty of our short supply chain, a flavorful and versatile cut that brings the authentic taste of tradition to the table. They come exclusively from pigs raised on the finest farms in Lazio, all certified organic and biodynamic. This guarantees free-range animals, fed healthy forage, free of GMOs and antibiotics, and with full respect for their welfare.
The meat, perfectly marbled, is incredibly tender and flavorful. It's the perfect cut for slow cooking, during which the fine fat melts, flavoring the meat and creating rich sauces, but it's also the undisputed star of any barbecue.
The product arrives at your home in a convenient vacuum-packed container weighing approximately 450g, which preserves its freshness. Slight variations in weight are a hallmark of artisanal processing, which ensures a product of superior quality and integrity.
In Italian cuisine, and especially in Roman cuisine, spareribs are an institution. They're the key ingredient in Sunday sauce, the one that simmers slowly for hours, releasing a fragrance reminiscent of home and celebration. Bringing a certified organic product to the table means making a choice based on taste and safety. Our pork is completely free of residues of antibiotics, growth hormones, or pesticides from feed. It's a clean and healthy food.
Although it's a flavorful cut, organic pork is a valuable source of high-quality protein and B vitamins, especially B1 and B12, which are important for energy metabolism and the nervous system. A true pleasure, to be savored without compromise.
Brown the ribs in a sauce of Red onion and carrots. Blend with red wine and add a Biodynamic Artisan Tomato Puree high-quality. Let it simmer on very low heat for at least two hours. The result will be a thick and flavorful sauce, perfect for seasoning rough pasta like Half Rigatone Senatore Cappelli Organic.
The easiest way to get explosive flavor. Marinate them for an hour in oil, Fresh Rosemary and garlic. Cook them on the grill or on the coals until perfectly golden. They are the key element of our Small Barbecue Box, to be enjoyed with a glass of Godot Organic Sangiovese.
A rich and comforting "white" version. After browning the spare ribs, deglaze with dry white wine, add vegetable broth and cook slowly. Halfway through cooking, add the Organic New Potatoes cut into small pieces, which will absorb all the flavour.

Even though I rinsed them to reduce the strong smell they had when they were first opened, they browned perfectly, without releasing any liquid and therefore without splattering too much, unlike more commercial meats which, even if dried well, almost always end up boiling, not roasting.
