Organic Margherito Semolina Spaghettoni are made by the artisanal pasta factory Molino Crisafulli with Margherito semolina, an ancient Sicilian wheat grown directly on the mill's farm, using organic methods and without pesticides or insecticides. They are bronze-drawn, giving the pasta its characteristic rough surface that perfectly holds sauces, and slowly dried at low temperatures, a process that preserves the grain's organoleptic and nutritional qualities. Spaghettoni are the thicker and fuller version of classic spaghetti: their larger diameter provides a full, satisfying chewiness and extraordinary cooking resistance, making them perfect for bolder, more structured sauces. Made exclusively with organic semolina from the prized Margherito, the "twin" of Senatore Cappelli, they are an authentic and easily digestible pasta.
 
 
 

The roots of this format are deep in the history of spaghetti

Spaghetti is the quintessential Italian pasta shape, a symbol of Italian cuisine around the world. Its origins are rooted in the history of Mediterranean dried pasta, and Sicily—where the famous "itriyya," dried pasta strands, were already being produced in Trabia around the year 1000—is considered one of the cradles of this tradition. Spaghettone, with its larger diameter, represents the more robust and contemporary evolution of this great classic, now beloved by top chefs for its firm bite and ability to withstand intense cooking and stirring. It is the ideal shape for the great classics of Roman and Mediterranean cuisine, from cacio e pepe to carbonara, where the rough surface and generous texture hold and blend the sauce perfectly. Choosing Spaghettoni Margherito means taking care of yourself

Ancient grains like Margherita are now being re-evaluated as valuable allies of health. Compared to modern grains, they are naturally higher in protein and have a simpler, less tenacious gluten network: this makes the resulting pasta lighter and more digestible, while maintaining excellent cooking resistance—a quality particularly appreciated in a thick shape like spaghetti. Bronze-drawing and slow drying at low temperatures best preserve the proteins, intense aroma, and nutritional characteristics of the grain. Durum wheat semolina pasta is a valuable source of complex carbohydrates, which provide slow-release energy, as well as plant-based proteins (approximately 11,8 g per 100 g), minerals, and B vitamins. The Producer: Molino Crisafulli

Molino Crisafulli is a historic mill in Caltagirone, Sicily, operating since the early 1900s and managed by the Sammartino family. It directly cultivates ancient Sicilian grains and hemp using organic methods and a short supply chain, grinding them with stone and cylinder mills using artisanal methods. It also produces semolina pasta from its ancient grains in its own artisanal pasta factory. It is the guardian of the milling tradition and the island's precious native grains.
