Anyone who's tried whole-wheat pasta knows that taste is often the price you pay for fiber. Here, the opposite is true. This spaghetti is made from whole-wheat Senatore Cappelli durum wheat semolina, grown on the company's fields in Cerignola. It's ground with the germ, bronze-drawn, and slowly dried between 32 and 38°C. The result is a pasta with a natural color and a delightful flavor, with ancient and ancestral aromas, persistent and delicate notes of a pleasant bitterness—more pronounced than non-whole-wheat Cappelli—and a good underlying flavor, derived from the wheat's cultivation near the salt pans of Margherita di Savoia. It holds its shape perfectly when cooked, maintaining a classic structure.
Senatore Cappelli is a variety selected in 1915 by Nazareno Strampelli, the geneticist who revolutionized Italian grain cultivation, and takes its name from Senator Raffaele Cappelli, a proponent of the agrarian reform that supported his work. For decades, it dominated the fields of Southern Italy, only to be almost abandoned after the war in favor of dwarf varieties, which were more productive and easier to harvest by machine. Cappelli is, in fact, a "tall" wheat: its straw can exceed 1.8 meters, making it more susceptible to lodging and much less generous in yield. But that height also has considerable agronomic value, as it shades the soil and naturally contains weeds—which is why it has become a key player in organic farming, where herbicides are nonexistent. Growing it means accepting a lower yield in exchange for a grain with an aromatic profile that modern varieties lack.
Furosine is the indicator that measures the thermal damage suffered by pasta during drying: the lower the value, the gentler the processing was and the more the nutritional value of the grain has remained intact. This is the parameter that distinguishes slow, low-temperature drying from rapid industrial drying processes, which can exceed 80°C.
The nutritional profile speaks for itself: 14,4 g of protein and 8,33 g of fiber per 100 g, a rare balance. Wheat bran fiber helps accelerate intestinal transit, and this effect is achieved with at least 10 g of wheat bran fiber per day. Whole-grain milling with the germ naturally results in a higher presence of mono- and polyunsaturated fats at the expense of saturated fats, which represent just 19% of total fat. Salt is virtually absent, at 0,017 g per 100 g. A truly nourishing pasta dish, without sacrificing pleasure.

Store in a cool, dry place, away from light and heat, resealing the package tightly after opening. Whole wheat pasta contains wheat germ, which is higher in fat than refined semolina. Therefore, it should be consumed by the indicated date and kept away from moisture, which would compromise its flavor.
