Shiitake, (Lentinula edodes), is a mushroom of Asian origin, widespread above all in Japan and China.
Its name means "oak mushroom" and it is the second most consumed edible mushroom in the world.
Apparently it might seem only an exotic variant of our local mushrooms: instead, in addition to a great flavor and a moderate caloric intake due to the quantity of proteins present (296 kcal/1238 kJ per 100 g of dry product) it has extraordinary extra-nutritional qualities.
Its most common use is naturally linked to food.
It is excellent for the preparation of soups but it can be employed in others as well first dishes, for example in combination with rice, or as a side dish and as a condiment for other dishes.
Cool, it's one fiber source insolubles that keep the intestine healthy and it is particularly sought after for its excellent aroma.
It tastes Crudo in salad with thyme, Breton salt, linseed oil and soy sauce.
Stewed, with its firm and fleshy consistency, is a tasty side dish or filling for jacket potatoes and savory pies, to try with leeks, squash, garlic, parsley and a drizzle of olive oil.
It is also used as a food supplement to boost the immune system and to protect cells from oxidative stress.
It would also be able to help lower cholesterol and fight tooth decay and arteriosclerosis.
It also has an antitumor, anti-inflammatory and antibacterial action. On the anti-cancer effects of a particular substance, isolated from the mushroom, clinical studies are underway.
Shiitake is nutritious, rich in proteins (the content of these corresponds to about 17,5% of the total dry matter), with nine essential amino acids.
It also contains substances that help control blood pressure, reduce cholesterol levels, strengthen the immune system and inhibit the development of tumours, viruses and bacteria.

PREPARATION:.
Peel the SAUSAGE and cut it into slices. Drain the BOCCONCINI and cut them into thin slices.
Cut the BREAD to form squares, then let it toast
Assemble the canapé by spreading the slices of BOCCONCINO and a drizzle of OIL on the surface of the BREAD. Place in the oven and let it melt, then arrange the SAUSAGE and garnish with the SHIITAKE. If you like, sprinkle with PEPE.
Serve them hot and enjoy your meal!
