Hemp has a very ancient history in Sicily and throughout Southern Italy: until the middle of the last century, it was cultivated along waterways, primarily for straw and the production of highly prized ropes and fabrics. Then, for historical and regulatory reasons, this valuable crop was almost entirely abandoned. Molino Crisafulli was among the first to systematically bring it back to Sicily, starting experimental crops in 2016. These crops are now being grown thanks to collaborations with CREA, the Experimental Station for Graniculture, and the University of Milan, as part of the Semincanta project. Hulling, or removing the seed's outer husk, is a delicate process that enhances the softness and creaminess of the seed's core, making it ready for use and even more palatable. This meticulous process fully showcases this gift from the Sicilian land.

Molino Crisafulli is a historic mill in Caltagirone, Sicily, operating since the early 1900s and managed by the Sammartino family. It was among the first to bring the systematic cultivation of edible hemp back to Sicily, cultivated in rotation with ancient grains using organic methods and a short supply chain. It grinds using stone and cylinder mills using artisanal methods, safeguarding the island's milling tradition and indigenous raw materials.
