Red Jalapeño Salsa is made from the meticulous selection of jalapeño peppers harvested at the peak of ripeness, when they turn a vibrant red. This variety, slightly spicier than green jalapeños, stands out for its fruity notes and intense aroma. The peppers are grown according to organic and biodynamic farming principles with Demeter certification and come from the Camurein farm in Reggio Emilia, just 60 km from the vinegar factory: a very short supply chain, measured in kilometers, not continents. The combination of red jalapeños with organic and biodynamic wine vinegar creates a sauce with a unique character, a natural and rich texture, enriched by the pure pulp of the pepper.
All chili peppers start out green and turn red: the color doesn't indicate a different variety but rather a different harvest time. The green jalapeño, the most common on market stalls, is picked before the plant has finished its work; by letting it ripen until red, the sugars concentrate, the carotenoids develop, and the capsaicin increases—this is why the red one is sweeter, more fragrant, and slightly spicier. For the farmer, this is a costly choice: it means leaving the fruits on the plant longer, occupying the field, accepting lower yields, and risking the first rains. In Mexico, where the jalapeño takes its name from the city of Xalapa, red fruits are traditionally used in the most refined preparations, whether smoked or preserved. Choosing only red, as Acetaia Guerzoni does here, is a declaration of intent even more than a choice of taste.
Low in calories and low in sugar and carbohydrates, this sauce is ideal for those following a low-calorie diet and seeking a lighter alternative to traditional spicy oils, which are significantly higher in calories: 24 kcal per 100 ml versus hundreds of calories in oil. Chili pepper provides capsaicin, vitamin C, and carotenoids—the latter particularly abundant in ripened red fruits—while wine vinegar contributes acetic acid, traditionally associated with digestion. Just one caveat: containing 2,4 g of salt per 100 ml, it should be used sparingly by those following a low-sodium diet.
