Rosmè – Fiore di Rosè is Cantina Giara's refined rosé, made from Primitivo grapes grown in the Jazzo di Stefano area of Adelfia, Puglia. It is created from a brief contact of the free-run must with the Primitivo skins, followed by spontaneous and natural fermentation, which gives it its delicate and luminous pink color. Unfiltered and unclarified, it is a wine with an enveloping aromatic complexity, floral and fruity. The grapes come from a thirty-year-old vineyard trained using canopies, on calcareous-clay soil, at 231 meters above sea level, where the temperature variations give the Primitivo a remarkable, expressive freshness. Aged for twelve months in stainless steel, it is the elegant rosé expression of Giorgio Nicassio's artisanal and biodynamic philosophy.
Primitivo is Puglia's most iconic red grape, a symbol of the warmth and generosity of this sun-kissed land. Its name derives from its early ripening—"primativo" in dialect means "the first to ripen"—a characteristic that has always distinguished it. Traditionally vinified as powerful and structured red wines, Primitivo reveals an unexpected soul in its rosé version: fresher, more elegant, and drinkable, capable of surprising. Rosé, after all, is one of the oldest wines in history: the first wines produced by man, with very short macerations, were indeed pale in color. The name "Fiore di Rosè" celebrates both the delicate floral color and the use of the prized "mosto fiore," the noblest of the musts. Cantina Giara thus creates a natural rosé of rare finesse, made from ancient grapes.
A wine produced through spontaneous fermentation using indigenous yeasts, unfiltered, and organically and biodynamically grown, represents a conscious choice for a more natural and authentic drinking experience. The brief contact with the Primitivo grape skins gives this rosé a good dose of polyphenols and antioxidants, typical of wines made from red grapes, while maintaining the freshness of a rosé. Biodynamic cultivation on calcareous-clay soil, without synthetic products and with low yields, guarantees a lively and authentic product. The addition of sulfites is kept to a minimum. Any residues are natural and testify to the wine's authenticity. Consumed in moderation, it is part of the convivial Mediterranean tradition, showcasing Puglia's noblest native grape variety.

AGING/REFINEMENT: 12 months in 800-liter steel tanks, until bottling

It has a bright pink color, with the natural haze typical of unfiltered and unclarified wines. Any residue on the bottom is completely natural and testifies to the authenticity of the product.
The nose reveals an enveloping aromatic complexity, floral and fruity, dry and velvety. An elegant and delicate bouquet, a refined expression of Primitivo vinified as a rosé.
On the palate, it is elegant and harmonious, with a dry and pleasantly fresh flavor. It offers a characteristic finish of progressive black berries, which enhances its persistence and reveals its Primitivo origins.
An elegant and versatile rosé, it pairs perfectly with aperitifs and cured meats, pasta dishes and pizzas, fish, and fresh cheeses. Its freshness and aromatic complexity make it a perfect wine for all meals, the perfect accompaniment to Mediterranean cuisine. Serve chilled at 10-12°C.
Cantina Giara is a small, family-run winery in Adelfia, Puglia, led by winemaker Giorgio Nicassio. They practice exclusively biodynamic viticulture, using natural, spontaneous fermentation vinification without fining or filtration, and define themselves as "artisans of wine."
