The rosé version of our Pet-Nat: a dialogue between white wines from Orvieto and Sangiovese from the volcanic plateau of Alfina.

Il Rebelle Mariage Pink of Malauva Casa Agricola is the version sparkling rosé of the famous Pet-Nat by Elisa and Giovanni: a wine with a creative character born from the meeting between the four native white grape varieties of Orvieto Procanico, Malvasia, Drupeggio and Verdello — and the Sangiovese, symbol of the red wines of Central Italy. The production technique is refined and personal: the white grapes are subjected to direct pressing, and the must obtained is then passed over the Sangiovese pomace company for the time necessary to obtain a characteristic pink color and to delicately absorb the aromatic and phenolic components of the red grape. After the fermentation in steel, follows the refermentation in the bottle with the addition of must obtained from a late harvest of the same varieties, and after a few months of refinement on the yeasts the disgorgementA sparkling rosé more structured and complex of the White version, thanks to the contribution of Sangiovese, but equally fresh, lively and drinkable.
I rosé wines They have an ancient gastronomic history, but they have never been banal: the color pink of a wine can be obtained through at least three different winemaking techniques, each with its own character. The most widespread is the "bleeding" (bleeding) French, in which after a brief maceration of the red grapes, part of the rosé must is "bled" to concentrate the red wine and obtain a rosé at the same time. The second is the “direct pressing” of red grapes, which produces pale rosés of the Provence type. The third is the “review” of white must on red pomace — a technique chosen by Malauva — which produces rosés more structured and complex of those from direct pressing, thanks to the addition of tannins, anthocyanins, and aromatic compounds from the red grapes to the basic white must. This technique is particularly appreciated in the Italian tradition, where it has historically been used to create rosés of character—a system that revives the great peasant tradition of enhancing every part of the grape without waste. The combination of ripasso with ancestral method refermentation in the bottle (Pet-Nat) is even rarer and more personal: a choice that best expresses the Malauva's creative philosophy in seeking new paths for native vines.

The Rebelle Mariage Pink presents itself in the glass with a pale salmon pink color, lively and bright, with shades reminiscent of onion skin — a characteristic chromatic expression of the Ripasso on Sangiovese pomace of medium duration. Being a unfiltered and unclarified wine, may present a slight natural opalescence and some sediment at the bottom of the bottle — a hallmark of authentic natural wines, not a defect. beadwork è fine and persistent, characteristic of the refermentation in the bottle with the ancestral method which produces more delicate and elegant bubbles compared to industrial carbonated sparkling wines. foam It's creamy, with a delicate pink hue, and develops progressively in the glass with bubbles rising in continuous chains. Il aromatic profile It is particularly fascinating for its double soul: the elegance of the native white grape varieties of Orvieto + the depth of the Sangiovese acquired through the Ripasso. On the nose, primary notes di small red fruits (wild strawberries, redcurrant, pomegranate, pink cherry) — contribution of contact with Sangiovese pomace — on a substrate of white-fleshed fruit (apple, white peach, pear) and fresh citrus fruits (lemon peel, pink grapefruit) typical of the basic grape varieties. Delicate notes are also perceived floral notes (wild rose, hawthorn, elderberry), fresh herbaceous hints and a well-known feature of pomegranate and grenadine. The refermentation in the bottle and the refinement on the yeasts adds notes of bread crust, brioche e fresh yeast. The minerality typical of volcanic soils It emerges as a subtle note of flint and tuff, giving depth to the bouquet.
In the mouth the wine reveals itself more structured and complex of the cousin Bianco thanks to the contribution of Sangiovese: theattack It is characterized by alively acidity and a strong flavor — direct expression of the volcanic soils of Alfina — accompanied by a light tannic presence derived from the repassing of the grape marc.effervescence è fine and creamy, non-aggressive, perfectly integrated into the structure of the wine. development in the mouth it is progressive: notes of crunchy red fruits, pink citrus fruits and a pleasant flint minerality. The persistence It is remarkable for a sparkling rosé of this range, with a long finish characterized by a pleasant note of pomegranate and a light tannic trail that marks its identity. 12% vol guarantees a perfect alcoholic balance, giving structure without heaviness. dryness is almost total (minimal residual sugars), as per the tradition of the local Pet-Nat. Store in horizontal position (to keep the cork moist), in a cool, dry place, away from direct light, at a constant temperature between 10°C and 16°C. Serve very cool at 8-10°C: place in the refrigerator at least 2 hours before serving. Open with caution due to the natural effervescence of refermentation in the bottle.
