Primo Fuoco Rosé Tuscan IGT Organic

The First Rosé Fire from Sammontana Farmhouse

Primo Fuoco Rosato is made from the gentle direct pressing of Montepulciano grapes, followed by a brief maceration on the skins for five to six hours. The grapes are fermented and then aged for approximately six months in large 500-liter terracotta amphorae. Grown organically and biodynamically, and produced in just 1.200 bottles, it complements the prestigious Primo Fuoco line alongside the red and white wines. Aging in amphorae makes this a rosé unlike any other: more structured, profound, and gastronomic, it elegantly pairs with rich dishes. Bottled unfiltered, it is a rare and fascinating wine, combining the typical freshness of rosé with the complexity provided by terracotta.

The roots of this First Fire are buried in the art of the amphora

Rosé is one of the oldest expressions of wine: in ancient times, many wines were pale in color, obtained from brief contact between the must and the skins, just as this Montepulciano does. Combining this tradition with vinification in terracotta amphorae—the most ancient method in winemaking history, practiced thousands of years ago in the Mediterranean—creates a fascinating bridge between two age-old skills. Terracotta, a porous and neutral material, allows the wine to breathe and evolve slowly, enhancing its purity and minerality without overpowering its aromas. With this rosé, Fattoria di Sammontana has created a project of rare ambition, where the ancient memory of wine becomes contemporary.

Choosing the First Rosy Fire means taking care of yourself

A wine produced organically and biodynamically, aged in amphorae and bottled without filtration, represents a conscious choice for a more natural and authentic drinking experience. Spontaneous fermentation and gentle processing preserve the original characteristics of the grapes and the integrity of the product. Montepulciano, a red grape variety, provides polyphenols and anthocyanins with recognized antioxidant properties, even in its rosé version. Aging in terracotta enriches its minerality. Consumed in moderation, it is part of the convivial Mediterranean tradition. Choosing a biodynamic wine also means supporting sustainable agricultural practices that respect the vitality of the soil.

VISUAL EXAMINATION

It has a delicate pale pink color with coppery reflections, bright and with a good consistency, an indication of the short maceration and the naturalness of the maturation in amphora without filtration.

OLFACTORY EXAMINATION

The nose is fine and complex: small red fruits—strawberry and pomegranate—combine with delicate floral and citrus notes and a refined mineral texture provided by the terracotta, in an elegant bouquet of surprising depth for a rosé.

TASTE TEST

On the palate, it's fresh yet surprisingly structured, with an enveloping flavor and a pleasant texture created by its time in amphora. The palate is full and gastronomic, with a long, minerally, and persistent finish.

FOOD PAIRINGS

A gastronomic and structured rosé, it pairs perfectly with rich fish dishes, seafood risottos, rich cured meats, vegetable dishes, and goat cheeses. Its complexity makes it a perfect accompaniment to sophisticated dishes, well beyond its classic aperitif role. Serve chilled, but not chilled, to appreciate its full nuances.
