Primo Fuoco Bianco is made from a careful selection of the finest Trebbiano Toscano, harvested from the estate's oldest vineyards. The grapes ferment in large 500-liter terracotta amphorae using indigenous yeasts, with daily manual punching down, followed by a long maceration on the skins for approximately two months. After racking, the wine returns to the amphorae for a further eight months of aging. It is therefore a macerated white—an "orange wine" of the finest school—with extraordinary personality and complexity. Grown organically and biodynamically, and produced in just 1.200 bottles, it represents the white twin of Primo Fuoco Rosso: a rare, vibrant wine with an unforgettable character.
Maceration of white grapes on the skins is the oldest winemaking technique, the one that gave birth to the first wines in history, vinified in terracotta amphorae, as was done thousands of years ago in the Caucasus. These "amber" wines, now rediscovered and celebrated as orange wines, revive an ancestral knowledge that yields intense aromas, tannic structure, and an extraordinary ability to pair with food. Trebbiano Toscano, a historic grape variety of these lands, lends itself magnificently to this interpretation, revealing an unexpected and profound soul. With this white wine, Fattoria di Sammontana has created a project of rare ambition, blending age-old tradition with a contemporary vision.
A wine produced organically and biodynamically, macerated and aged in amphorae without filtration, represents a conscious choice for a more natural and authentic drinking experience. Spontaneous fermentation using indigenous yeasts and lengthy maceration on the skins preserve and enrich the grape's richness. Prolonged contact with the skins gives this macerated white wine an unusually high concentration of polyphenols and antioxidants for a white wine. Consumed in moderation, it is part of the convivial Mediterranean tradition. Choosing a biodynamic wine also means supporting sustainable agricultural practices that respect the vitality of the soil.

It has an intense golden color with amber reflections, luminous and of notable consistency, an unmistakable visual signature of the long maceration on the skins and the naturalness of the vinification in amphora.
The nose is complex and enveloping: ripe and dried yellow fruit is combined with notes of aromatic herbs, honey, candied citrus peel and delicate spicy and oxidative hints, in a deep and original bouquet typical of great macerations.
On the palate, it is structured and full-bodied, with an unusual yet pleasing tannic texture created by maceration and an enveloping flavor. The palate is full and dynamic, with a long, persistent finish of fascinating complexity.
A macerated white wine with great culinary versatility, it pairs perfectly with spicy and aromatic dishes, ethnic cuisine, white meats, legume soups, and savory preparations. It is excellent with medium-aged, bold cheeses. Its tannic structure allows it to withstand challenging pairings that would challenge traditional white wines.
