Menaica Anchovy Pâté is the most concentrated form of Pisciotta's excellence: Menaica anchovies in salt, a Slow Food Presidium (Engraulis encrasicolus, FAO 37.1.3)—caught using the ancient menaica method, using gillnets and driftnets—make up 80% of the jar, creamed with olive oil, vinegar, and garlic. The result is a flavorful, deep cream, with a bold character and a velvety texture, delivering all the noble flavor of cured anchovies in a single teaspoon. Perfect for appetizers, first courses, savory pies, and fillings: it's a cooking secret that, once discovered, you'll never abandon.
Anchovy paste has a surprising history that begins at the sea and climbs the mountains: for centuries, anchovy traders traveled the "salt routes" from the Ligurian and Provençal coasts to the valleys of Piedmont, bringing barrels of salted anchovies that became the heart of bagna cauda—the warm sauce of anchovies, garlic, and oil that Piedmont's peasants have rallied around for generations—and of Provençal anchoïade, its cousin from across the Alps. Crushed anchovies are, in short, the oldest "stock cube" in the Mediterranean: the fifth taste before umami had a name. This pâté brings that knowledge back to the noblest possible source: not just any anchovies, but those of Cilento's Menaica, a Slow Food Presidium, ready-made in a cream.
This pâté is a powerhouse of functionality as well as flavor: Menaica anchovies provide 14,08 g of protein per 100 g, along with the omega-3-rich fat from the blue fish, complemented by olive oil. Its true virtue is its yield: just a few grams are enough to flavor an entire dish, replacing stock cubes, commercial seasonings, and—in many recipes—much of the added salt, with an ingredient that is simply expertly prepared fish. Vinegar and garlic, the world's two oldest natural preservatives, complete a list of ingredients that can be read in one breath: anchovies, oil, vinegar, garlic. Nothing else.
