Arteagricola's Organic Vegan Spelt and Senatore Cappelli Pastina is the perfect combination of two traditional Italian grains: Senatore Cappelli durum wheat and organic spelt, both grown on the company's fields. The pasta is made with 50% Cappelli semolina and 50% spelt flour, bronze-drawn to ensure optimal roughness and porosity, then slowly dried at temperatures below 32°C to preserve its aroma and nutrients. Measuring 3mm long and 3mm in diameter, this small pasta is ideal for broths, soups, and broths, where it releases the lingering aromas of semolina and ancient grains and maintains its perfect structure and firmness even beyond the recommended cooking time (10-12 minutes). An artisanal masterpiece that's impossible to resist.
 
 
 

The roots of this Farro Pasta are deep in tradition

Farro is considered the "father of all grains": its cultivation dates back over 10.000 years in the Fertile Crescent and it was long the staple grain of the Roman Empire, so much so that the word "farina" (flour) derives from its Latin name. Roman legionaries used it as a staple food, and the "panis quadratus" found in Pompeii was made with farro flour. The combination of this ancient grain with the modern Senatore Cappelli—a variety selected by Nazareno Strampelli in 1915—represents a bridge between the ancient history of Mediterranean agriculture and the seed excellence of 20th-century Italy.
