ESPRESSO AND GIANDUIA NATURALLY LEAVENED WITH SOURDOUGH

The sublime encounter between the warmth of coffee, the sweetness of Gianduia and the softness of Panettone

The Espresso Panettone and Gianduia Bicerin by Work Waiting

This panettone is a refined tribute to one of the finest examples of Italian coffee and chocolate: the Turin-based Bicerin. Made from a slow and expertly leavened sourdough starter, it combines the aromatic intensity of coffee extract and a rum and coffee syrup with the enveloping creaminess of Gianduja hazelnut paste.
The dough is enriched with generous chunks of dark and milk chocolate, melted with high-quality butter and eggs, to ensure unparalleled softness and moisture. The absence of candied fruit makes it particularly appreciated by those who crave the pure, overwhelming flavor of chocolate and coffee. Each bite is an intense experience, releasing notes of hazelnut, vanilla, and coffee, faithfully evoking the warmth and pleasure of a cup of Bicerin.
A handcrafted masterpiece, natural and free from preservatives, perfect served warm to maximize its aromas.

The roots of this Panettone Espresso and Gianduia are deep in tradition

This innovative panettone is rooted in two pillars of Italian culinary tradition: Milanese panettone, based on sourdough, and the culture of Gianduja and Piedmontese coffee. The "Bicerin" (small glass in Piedmontese) is a historic Turin drink made with coffee, chocolate, and cream, and this dessert captures its essence.
The use of carefully cultivated and refreshed sourdough starter ensures the finest expression of the ingredients and exceptional digestibility. The manufacturer has expertly combined his mastery of leavening with a selection of high-quality chocolates and hazelnuts (as suggested by the use of hazelnut paste), creating a bridge between Northern and Southern pastry-making through artisanal expertise.

Choosing Panettone Espresso and Gianduia Bicerin means taking care of yourself

Opting for a naturally leavened bread with live sourdough starter is a conscious choice for digestive health, as the long fermentation process pre-digests the dough, making it lighter. Being a natural product, it is free of preservatives, and the use of organic ingredients (such as flour, egg yolk, and honey) reduces exposure to chemical residues.
Furthermore, Panettone is enriched with dark chocolate, known for its antioxidant properties, and hazelnuts, a source of unsaturated fats. To best serve it, it is recommended to keep it at room temperature (no higher than 22°C, or slightly warmer) before consuming, to fully release its rich aromas.

How to Best Use: Panettone Espresso and Gianduia Bicerin

  • COMBINATION WITH COFFEE AND DARK CHOCOLATE:

Serve it warm, accompanied by a dark chocolate mousse and a small glass of ORGANIC DARK HAZELNUT CREAM 260G to enhance the notes of Gianduia and coffee.

  • REFINED BREAKFAST:

Start your day with a slice dipped in a cup of hot milk. For an extra touch, add some ORGANIC WILD FLOWER HONEY 500G to sweeten the Panettone without covering its intense flavour.

  • CRUNCHY DESSERT:

For a contrast of textures, serve the Panettone with a sprinkling of ORGANIC ROASTED SHELLED HAZELNUTS and a dollop of fresh cream or ORGANIC FARM PLAIN YOGURT.
