The Sliced ​​Organic Casertano Black Pork Rolled Pancetta from Tenuta Ara del Tufo is an extraordinary artisanal cured meat that represents the purest and most traditional expression of Campania's pork butchery: pancetta (a ventral cut of pork composed of alternating layers of lean meat and fat) from organically free-range Casertano Black Pork, salted with sea salt, generously flavored with organic black pepper, organic coriander, and organic chili pepper according to a traditional Southern Italian recipe that emphasizes intense spicy flavors, tightly rolled and tied, naturally cured without the addition of chemical preservatives (nitrites/nitrates), producing a cured meat with a powerful, layered aromatic profile where the noble fattiness of the lard blends with the salty saltiness and vibrant spiciness of the spices, a soft texture that almost melts in the mouth, and that authenticity that comes from respectful processing of excellent raw materials. Packaged thinly sliced ​​and ready to eat, this rare product (preservative-free pancetta has a short shelf life, therefore requiring a fast supply chain and quick consumption) demonstrates the Estate's commitment to maximum quality, authentic tradition, and the rejection of commercial compromises that would sacrifice substance.

The Casertano Black Pig (or Casertano Type Black Pig) is an ancient native Campanian breed that nearly became extinct in the 90s (reduced to a few hundred animals). Today, it is slowly recovering thanks to conservation efforts. It is characterized by a bristly black coat, a robust, compact build, and, above all, a perfect adaptation to extensive free-range/semi-free range farming in woodlands where it feeds on acorns, chestnuts, tubers, and wild herbs. This gives the meat and, especially, the fat superior organoleptic qualities: the fat is richer in monounsaturated fatty acids (primarily oleic, the same as olive oil) than intensively reared, grain-fed pigs; it has a lower melting point, making the lard soft and melting rather than hard and waxy; and it has a more delicate, sweet, aromatic flavor rather than neutral or rancid. The pancetta—a naturally fatty ventral cut with streaks of lean meat—of the Casertano Black Pig achieves exceptional quality, fully expressing the characteristics of this breed, where fat is not a defect to be eliminated but a virtue to be enhanced.

The processing follows the traditional southern artisanal method: the fresh pancetta (the belly of the freshly slaughtered pig) is selected, trimmed to eliminate excess while maintaining an optimal fat-lean balance, abundantly salted with sea salt which extracts moisture while preserving the meat and creating an inhospitable environment for pathogenic bacteria, massaged with a generous mix of organic spices - coarsely crushed black peppercorns which gives a persistent warm aromatic spiciness characteristic of southern cured meats, coriander with a delicate citrus-spicy aroma which balances the pepper, organic chili pepper (probably hot red chili pepper from Campania or Calabria) which adds further lively spiciness creating a decidedly strong savory cured meat not for delicate palates - then rolled tightly on itself starting from the rind (skin) side towards the inside forming a compact cylinder, tied with natural string in a tight spiral which maintains its shape during curing, and hung in cellars/cells at a cool controlled temperature of 12-16°C and 70-80% humidity where it typically ages. 60-120 days (pancetta requires longer curing than guanciale because it is a thicker cut).

During the aging process, fundamental transformations occur: dehydration, which concentrates flavors and creates a compact texture; controlled fat oxidation, which develops complex aromas of toasted nuts; enzymatic proteolysis, which makes proteins more digestible and develops flavorful umami notes; and the development of surface microbial flora, which protects against contamination and contributes to the aroma. All this occurs WITHOUT preservatives, which is a bold choice: chemical preservatives prevent botulism, maintain an appetizing pink color, and greatly extend shelf life, but they alter the natural flavor and are a concern for discerning consumers. Preservative-free pancetta requires rigorous hygiene controls, more careful aging, a shorter shelf life (consumed within a few weeks of slicing), and a more natural gray-pink color rather than an artificial bright red.

After curing, the pancetta is mechanically sliced ​​thinly, revealing its characteristic spiral cross-section with alternating layers of white-pink fat and pink-grey lean fat. It is then placed in a protective atmosphere or vacuum-packed tray, ready to eat. The result is pancetta with an intense aroma of toasted spices and fine cured fat, a rich flavor where the sweet, melting fat meets the salty saltiness and the layered spiciness of pepper, chili pepper, and coriander explodes.
