Each jar is the result of rigorously artisanal production, carried out in small batches of 20-25 kg, with the utmost attention to detail. Black Miso is distinguished by a rounded and particularly intense flavor, matured through secondary fermentation for at least 6-8 months. During this time, the product is left to evolve naturally, following seasonal temperature variations, just as the most ancient fermentation tradition dictates.

The creation of this black miso follows the traditional koji method, creatively adapted to local resources. The process begins with the production of spelt koji, inoculated with spores of Aspergillus oryzaeThis initial fermentation, which lasts about two days, requires constant monitoring to ensure the grain is perfectly aerated. The koji is then combined with cooked black lentils, water, and Sicilian sea salt.
The maturation process takes place primarily in stoneware or wood, allowing time to transform the starches and proteins into a symphony of complex flavors. This non-imitative approach makes Black Miso a distinctive product of Tuscia, where the green building of the production facility in Canino (VT) and organic farming among the olive trees contribute to creating a product that is an authentic expression of a cultural hub dedicated to wholesome foods.
