Arteagricola's Organic Senatore Cappelli Half Ziti bring an iconic shape from the great Neapolitan tradition to the table, made exclusively with 100% Senatore Cappelli durum wheat semolina grown on the company's fields. These fine tubes, 65mm long and 8mm in diameter, with a perforated center represent the "halved" version of the famous ziti, usually broken by hand before cooking. Bronze-drawing ensures the surface is porous enough to hold any sauce, while the extremely slow drying process below 32°C fully preserves the aromas of ripe wheat and the nutritional value of the Cappelli. With a quick cooking time of 7-9 minutes, these half ziti instantly release an intense aroma that evokes the scent of fresh bread and homemade pasta.
 
 
 

The roots of these Mezzi Ziti are deep in tradition

Ziti are one of the oldest and most iconic pasta shapes in Southern Italian cuisine: their name derives from the dialect expression "zita," meaning "bride" in Southern Italian languages, as they were traditionally served at wedding banquets. At Neapolitan wedding receptions, ziti, broken by hand by guests, were topped with the sumptuous Sunday ragù or the celebrated Genovese—a white sauce of onions and meat slowly cooked for hours, mistakenly attributed to Liguria but actually a symbolic dish of Naples since the 15th century.
