The Caserta Black Pig, or "Suino Nero," is an ancient native breed, already known and prized by the Romans for the quality of its meat. Recognizable by its dark, slate-colored skin and lack of hair (hence the nickname "pelatella"), it risked extinction in favor of more productive but less valuable breeds.
Today, thanks to the work of biodiversity custodians like Tenuta Ara del Tufo, this breed is experiencing a resurgence. Free-range breeding reproduces ancestral living conditions, allowing the animal to develop the superior organoleptic characteristics that have made it legendary over the centuries.
It may seem paradoxical to talk about well-being when referring to lard, but not all fats are created equal. The fat of the Caserta Black Pig, thanks to its diet of acorns and chestnuts and the animals' constant movement, has an extraordinary lipid composition.
It's extremely rich in polyunsaturated fatty acids, the so-called "good fats," even higher than saturated fats. This nutritional profile makes it more similar to extra virgin olive oil than industrial lard, helping maintain a healthy cholesterol level when consumed in the right quantities. It's the perfect combination. Toast a slice of Loaf of Bread with Mother Yeast 500g and place a slice of bacon on top while it's still hot. The heat will melt the fat, making it translucent.
