Sichuan Pepper and Citrus Kombucha is the boldest creation from Giulia Faraon's lab: a kombucha with sweetly spicy and citrusy notes, where Sichuan pepper is enhanced by grapefruit and orange peel, on a base of Assam and Ceylon black teas that lends a textured sip thanks to the tannins. Sparkling and with a smooth acidity, it's reminiscent—according to the producer—of an orange wine without the alcohol: a surefire accompaniment to pizza, a faithful companion for low-/medium-calorie aperitifs, a resource for food pairing with Asian dishes, and a valuable ingredient in cocktails. And if you find a baby scoby in the bottle, it's the artisan's signature: you're drinking a vibrant and beneficial kombucha.
 
 
 

The roots of this Kombucha are deep in tradition

Sichuan pepper holds a secret: it's not a true pepper, but the fragrant berry of a prickly ash tree that Chinese cuisine has revered for over two thousand years as huājiāo, "flowering pepper." Present at imperial banquets and the heart of Sichuan cuisine, it owes its fame to the sensation the Chinese call "má": that electric, slightly numbing tingle that vibrates on the lips and—the intuition behind this bottle—recreates tactile sensations similar to those of alcohol, making it the perfect ally for non-alcoholic drinks. Marrying it with citrus peel is also an ancient practice: in China, huājiāo has always been paired with dried mandarin peel. Giulia reinterprets that pairing with a Mediterranean twist, with grapefruit and orange, within the age-old art of fermented tea.

Live and never pasteurized or microfiltered, this kombucha preserves the beneficial microorganisms that convert sugar into organic acids during fermentation, enriching it with B vitamins, enzymes, and antioxidants—with black tea polyphenols enhanced by the work of the scoby. With just 23 kcal and 4,5 g of sugar per 100 ml, zero fat and zero salt, it's the aperitif that befriends the gut microbiota instead of weighing it down: the enveloping sensation of Sichuan pepper gives fullness to the sip without a gram of alcohol, for toasts that the next day are remembered only for their taste.

The Producer: Funky Fermenteria

Funky Fermenteria is Giulia Faraon's artisanal workshop in Nervesa della Battaglia, near Treviso. Faraon, the designer, left everything behind to ferment live, unpasteurized kombucha in small batches—a curious exploration of the untapped potential of non-alcoholic beverages in the heart of the Prosecco region.
 
 
 

Ingredients

Water, live kombucha culture (bacteria and yeast), sugar, Assam tea, Ceylon tea, Sichuan pepper, grapefruit peel, orange peel.

Storage: Store below 10°C. This is a live, unpasteurized product: the presence of a small scoby in the bottle is a sign of authenticity.
