Milky Oolong Kombucha is the most elegant creation from Giulia Faraon's lab: just four ingredients—water, sugar, Milky Oolong tea, and live kombucha culture—for a non-alcoholic sparkling drink that's unmistakably lactic and captivating from the first sip, quickly releasing notes of peach, lychee, and white-fleshed fruit, with a decidedly sweet and velvety profile. The Milky Oolong is a semi-oxidized tea native to Fujian, China, whose leaves are enveloped in milky vapor during processing to amplify the creamy notes of the infusion: sweet and velvety, it glides into tropical aromas reminiscent of pineapple and coconut milk. Unfiltered and unpasteurized: if you find a baby scoby in the bottle, it's the artisan's signature.
 
 
 

The roots of this Sparkling Tea are deep in tradition

Oolong means "black dragon," and Fujian—the Chinese region overlooking the sea, the mother of nearly all the great teas in history—is the lair where this dragon was born. Here, masters invented semi-oxidation, the art suspended halfway between green and black tea that gives oolongs their legendary complexity. Milky Oolong is the most seductive of the family: a descendant of the Jin Xuan cultivar, the "golden lily," it conquered the world with its natural creaminess, reminiscent of milk and flowers, so surprising that it fueled legends about its origins. Transforming it into sparkling tea is the latest evolution in a thousand-year-old tradition: the fermentation of kombucha, also born in Asia, which gives the black dragon a trail of bubbles.

Funky Fermenteria is Giulia Faraon's artisanal workshop in Nervesa della Battaglia, near Treviso. Faraon, the designer, left everything behind to ferment live, unpasteurized kombucha in small batches—a curious exploration of the untapped potential of non-alcoholic beverages in the heart of the Prosecco region.

Storage: Store below 16°C. Serve chilled. This is a live, unfiltered, and unpasteurized product: any small SCOBY residue left in the bottle is a sign of authenticity.
