Tuscan Kimchi is a bold and locally rooted interpretation of the famous Korean recipe, made entirely with vegetables grown organically on the farm's own fields. The heart of this preparation is a spontaneous lactic fermentation that occurs directly in the jar, without any pasteurization, preserving the live cultures and the explosion of flavors intact. Savoy cabbage, fresh leeks, wild plums, garlic, and chili pepper blend in a perfect balance of acidity, spiciness, and sweetness, creating a vibrant, profound, and surprising condiment. A reinterpretation that expresses Tuscany through an ancient Eastern technique.
Kimchi originated in Korea over two thousand years ago as a method of preserving vegetables during the long winters, becoming over time a symbol of identity and a cultural heritage recognized by UNESCO. Each family passed down its own recipe, guarding the secret of natural fermentation, much like sourdough bread in our countryside. Tuscan Kimchi draws on this ancient wisdom and grafts it onto Italian peasant tradition, replacing typical Asian ingredients with exquisite produce grown in the heart of the Tuscan countryside, in a virtuous dialogue between distant cultures.
As a raw, unpasteurized food, Tuscan kimchi is rich in live lactic acid bacteria, precious allies of the intestinal microbiota and the immune system. Savoy cabbage provides vitamin C, vitamin K, and fiber, while garlic and chili pepper are known for their antioxidant, anti-inflammatory, and cardioprotective properties.
