This grappa is born from the creative vision of Sardinian distillers who sought to revive an ancient, almost forgotten tradition: the use of crab apple seeds (Malus sylvestris), small wild fruits that grow in the island's mountainous and wooded areas, to flavor spirits with bitter, almondy, and slightly bitter notes. Unlike modern cultivated apples, which are sweet and juicy, crab apples are small, tart, rich in tannins, and characterized by particularly aromatic seeds containing amygdalin, a glycoside that during alcoholic maceration releases delicate hints of bitter almond and stone, creating a unique, sophisticated, and intellectually stimulating aromatic profile.
