The bean has the flavor of spring and therefore, as a fresh product, it is available between April and May, until June, but it is important that at the time of purchase the pods are shiny, spotless, so as to 'snap' as a sign of freshness, when they break to get the seeds.
They can be eaten raw, in salads or with bread and salami, or together with cheeses such as Pecorino Romano IGP, as the Roman tradition dictates, especially on the occasion of May 1st.
