Ideal for preparing traditional and tasty polenta, Fioretto Corn Flour is an indispensable element for creating dishes rich in flavor and authenticity.

Excellent for making delicious soft and fluffy polenta to accompany cheeses, vegetables and delicate sauces, but also delicious and fragrant tarts and biscuits, also suitable for those who are intolerant to gluten. In fact, corn flour does not contain any.

Basically, corn flour contains:
-Put the water to boil and add salt when it boils.
-Add the organic corn flour bramata or fioretto and mix immediately vigorously, perhaps with a whisk, in order to prevent the formation of lumps.
- Just makes the bubbles stir until they begin to thicken.
-If you are not using an electric mixer for corn flour, mix very often as it coarsens slowly.
-The important thing is that to be digestible, the polenta must cook at least 45 minutes, and must be constantly stirred.
-For the craved flour a little more water is needed than the fioretto flour, used here in our video recipe, about 250cc.
-You will understand when it is cooked when it will start to make the typical crust and to have a toasted smell.
-Pour and accompany with a meat side dish
-A tip not to go crazy in cleaning the cauldron: as soon as you have poured the polenta, put it upside down under a jet of ice water, the thermal shock will detach the crust.

I use this excellent flour for biscuits or corn bread, but it is also very good for soups and soft polentas, especially those cooked with vegetables inside (broccoli or turnip greens).
