Biofavole's Organic Vegetable Stock is the artisanal answer to supermarket stock cubes: a creamy vegetable broth made from 90% mixed organic vegetables—carrots, onions, celery, Swiss chard, zucchini, leeks, and tomatoes—grown in the family gardens of Ortezzano di Fermo, in the rolling hills of the Valdaso valley in the Marche region. The vegetables are slowly cooked, blended until they form a silky cream, and enriched with a bouquet of organic aromatic herbs (marjoram, thyme, sage, basil, and parsley) for a final aromatic bouquet. Salt, the only non-vegetable ingredient, is added exclusively to ensure natural preservation. No MSG, no vegetable fats, no artificial flavors, no colorings: just the concentrated essence of the farmer's garden. Washing, trimming, sorting, and packaging in sterile, pasteurized containers are performed entirely by hand by the company's laboratory staff.
 
 
 

The roots of this vegetable stock are deep in tradition

The use of stock cubes as a concentrated broth originated in the second half of the 19th century, when German chemist Justus von Liebig developed the first industrial "meat extract" intended for mass export. Its vegetable version, however, is a product of time-honored Italian peasant tradition: in the kitchens of grandmothers in the Marche, Romagna, and Tuscany, "soffritto santo"—chopped vegetables, salted, and preserved in earthenware pots—was already being prepared, intended to flavor soups, sauces, and roasts throughout the winter. Vegetable broth has been a staple of Mediterranean cuisine for centuries: Pellegrino Artusi, in his 1891 masterpiece, dedicated an entire chapter to vegetable broths, calling them the foundation of all good Italian cuisine. Biofavole's Organic Vegetable Stock Cube is a virtuous version of an everyday classic: completely free of monosodium glutamate, chemical preservatives, hydrogenated fats, or artificial flavors typical of commercially produced cubes. The organic vegetables provide a complete mix of vitamins (A, C, K, folate), minerals (potassium, magnesium, vegetable iron), and fiber (1,5 g per 100 g), while the bouquet of aromatic herbs adds polyphenols and volatile compounds with antioxidant and digestive properties. With just 25 kcal per 100 g, zero sugar, and very low fat, it is gluten-free, vegetarian, and vegan. It's important to note that salt is present in significant quantities (10 g per 100 g): the suggested use is just 1-2 teaspoons per serving, ensuring a low and perfectly balanced sodium intake.
