This couscous is born from a happy encounter: the most convivial and versatile form of Mediterranean cuisine, couscous crumbs, made with organic whole spelt grown by Dolci Giuseppina in the mountain fields of Monteleone di Spoleto. The product is precooked according to tradition: just 3-5 minutes of rehydration in water or hot broth, a forkful to loosen it, and it's ready to receive any seasoning—vegetables, legumes, fish, meat, or simply fresh herbs. Compared to refined semolina couscous, whole spelt couscous brings a deeper, nuttier flavor to the table, with 9,2 g of fiber and 13 g of protein per 100 grams: the oldest and healthiest fast food there is.
Couscous is the masterpiece of the Berbers of North Africa, who for over a thousand years have hand-wrapped the moistened semolina, rolling it between their palms, grain by grain, before steaming it in a couscous pot. From the Maghreb, the golden grain crossed the Mediterranean with Arab traders and landed in Sicily, where it became the "cùscusu" of Trapani and San Vito Lo Capo—now celebrated annually with a festival that unites the peoples of the sea around the same dish. This couscous takes a further step in its journey: it ascends from the island to the Apennines and marries the Berber technique with spelt, the grain that nourished Rome. Two shores of the Mediterranean, two thousand years of history, a single dish that unites them.
The difference lies in the whole grain: while traditional couscous is made from refined semolina, this one retains the bran of whole spelt, providing 9,2 g of fiber per 100 grams—valuable for satiety and intestinal regularity—and 13 g of protein, making it a complete dish in itself. The more gradual release of carbohydrates compared to refined semolina provides energy without spikes, while the virtually zero salt content leaves you complete control over the seasoning. Pre-steamed and ready in minutes, it proves that quick cooking can also be the most nutritious: organic, whole, and mountain-sourced.
Dolci Giuseppina is a family-run farm in Monteleone di Spoleto, the highest municipality in Umbria. On land inherited from their grandparents, at about a thousand meters above sea level, the family grows the famous mountain spelt along with ancient legumes and saffron, using methods that preserve the soil's fertility and an authentic farming tradition passed down from generation to generation.
