Wild blackthorn is one of those fruits that almost no one has ever tasted, yet it has always grown on the edges of fields and along hedgerows throughout Italy. Its small, dark blue berries, veiled in bloom, are so tart and astringent when picked raw that they make your mouth water. When cooked, everything changes: the tartness transforms into an intense, acidic, and deep flavor, with notes reminiscent of plum, blackcurrant, and a slight bitterness of almond. The result is an extra jam with a deep purple color and a bold character, a far cry from the sweet, bland marmalades found in supermarkets. Just three ingredients—blackthorn, sugar, and lemon—and a full 100g of fruit per 100g of product.
The blackthorn (prunus spinosa) is the wild ancestor of many of our cultivated plums, and humans have been harvesting its berries since ancient times: remains have even been found in Stone Age pile-dwelling villages. For centuries, it was the fruit of peasant hedgerows, those thorny barriers that divided fields and protected livestock, and which in autumn offered their fruit free to those who waited. Tradition, in fact, teaches a precise rule: the berries should be harvested after the first frosts, when the cold softens the pulp and reduces its astringency. In the Italian countryside, the blackthorn has become a liqueur, like bargnolino, a jam, and a home remedy; in the Anglo-Saxon world, it gave rise to sloe gin. Today, with the disappearance of hedgerows due to intensive agriculture, finding it in jam is almost an act of resistance.
Blackthorn berries are among the wild fruits richest in phenolic compounds and anthocyanins, the dark pigments that give them their color and are known for their antioxidant properties. They are also particularly rich in tannins, responsible for their characteristic astringency, and folk tradition has always considered them a digestive aid. The ingredient list is limited to three items, with no added pectins, preservatives, colorings, or flavorings, and the jam is naturally suitable for celiacs. Like any jam, it remains a sweetened product to be enjoyed in moderation, but with the advantage of a wild fruit that no intensive cultivation has ever touched.

Store the jar tightly closed in a cool, dry place, away from light. After opening, refrigerate and consume within 5 days, always scooping with a clean, dry teaspoon. Since this is a handcrafted product using wild fruit, color and consistency may vary slightly from jar to jar.
