Historical information on the Certosa of Florence

The Certosa di Firenze, also known as the Certosa del Galluzzo, is a monastic complex of extraordinary beauty and antiquity, founded in 1341. For centuries, the Carthusian monks who lived there devoted themselves to prayer, study, and work, also developing artisanal skills in the production of liqueurs, medicinal herbs, and jams.

Their philosophy of life, based on simplicity and respect for nature, was reflected in the excellent quality of their products.

• Prepare the biscuit and butter base and the cream cheese and whipped cream. Pour the cream over the base and let it cool. Before serving, decorate the top generously with jam.

• Roll out the shortcrust pastry in a cake pan. Pour a generous layer of jam and cover with crisscrossed pastry strips. Bake until the pastry is golden brown.

PANCAKES WITH BLUEBERRY SYRUP

• Prepare the pancakes and serve them hot. Lightly melt the jam in a saucepan with a splash of water to thin it out and pour it over the pancakes, garnishing with fresh blueberries.
