Pink onions are a treasure trove of European horticultural tradition: in Italy, the most famous is the Rosa di Breme, which legend has it was brought to Lomellina by Benedictine monks over a thousand years ago and has been preserved from generation to generation ever since, earning it the nickname "sweetest." Like her, the pink varieties were born from the patient eye of farmers, who selected the bulbs with the palest color and most balanced flavor for subsequent plantings.
