Arteagricola's Organic Senatore Cappelli Cicatelli are a traditional Southern Italian pasta shape, made with 100% Senatore Cappelli durum wheat semolina grown on the farm's fields. With an elongated, concave shape—23mm long and 5mm in diameter—the cicatelli are born from the ancient practice of "digging" the pasta with your fingertips on a wooden board, creating small boats that generously hold any sauce. Bronze-drawing creates the characteristic rough, porous surface, while slow drying at below 32°C preserves the ancient grain's aromas and nutrients. With a cooking time of 11-13 minutes, the cicatelli maintain an excellent hold and a consistently well-defined structure, imparting the unmistakable aroma of ripe wheat and homemade bread that characterizes the entire ARTE line.
 
 
 

The roots of these Cicatelli are deep in tradition

Cicatelli—also called "cavatelli" in other regions—are a pasta shape deeply rooted in the culinary traditions of Molise, Puglia, Basilicata, and Campania. The name derives from the act of "cavare" (removing) the pasta: a small cylinder of dough was dragged with one or two fingers across a floured table, creating the characteristic curved shape. This manual technique was a tradition of Southern Italian housewives, passed down from generation to generation as a domestic ritual on Sundays and holidays. Traditionally, cicatelli were made with local durum wheat semolina and water, without eggs, becoming a humble yet nutritious dish of peasant cuisine. Arteagricola reinterprets this artisanal heritage with Senatore Cappelli wheat selected in 1915 by Nazareno Strampelli, revitalizing one of Southern Italy's most beloved pasta shapes.
