The flavor is good and it is convenient to have the cardoons already cleaned and cooked. However, the fact of having cut them so small limits their use: they can be fine for flans, first courses (soup and risotto) but not for anything else. I would suggest leaving them whole, so as to use them as a side dish: in parmigiana as in Umbria or "Remade" in the Tuscan way
