Biodynamic Veal Steak: A superior taste experience

Cooking Tips:

  • Cook the steak over high heat to seal in the juices and keep the meat tender.
  • Don't overcook the meat, otherwise it will become tough. The ideal cooking point depends on your taste, but in general medium or rare is best.
  • Let the meat rest for a few minutes before cutting, so that the juices are evenly distributed.

IS THIS MEAT ALSO CERTIFIED GRASS FED MEAT?

GRASS FED MEAT
When you find this label on the product then it is Grass Fed certified.

Power supply is based exclusively or predominantly on grass and forage throughout the entire life cycle, from birth to slaughter.

The entire herd is on open pasture and they feed 90% of their life on grass and forage but not always.

But it can happen a few times a year that a Certified Grass Fed Beef is slaughtered. When this is the case you will find the green “Grass Fed” label on the product”

The meat is slaughtered approximately once a month and placed in a latest-generation vacuum that lasts almost a month, so you can be sure of the freshness and quality of the product, considered the best in all of Lazio.

From Our Land to Your Table

Our meat comes exclusively from animals born and raised on our farm, belonging to the Marchigiana, Limousine or Meticcia breeds. We slaughter our animals between 20 and 28 months, guaranteeing young and succulent meat.

Our beef is certified organic by CCPB and biodynamic by Demeter, a testament to our commitment to quality and sustainability.

The diet is mainly based on grass and hay produced on the farm, with limited additions of organic cereals. The company is committed to ensuring the harmonious coexistence between man and nature, promoting sustainable breeding that respects the ecosystem.

Organic and Biodynamic Meat

Demeter certified meat comes from farms that follow the principles of biodynamic agriculture, a method that goes beyond traditional organic.

What does it mean?

  • Respect for animals and the environment: The animals are raised in welfare conditions, with access to pasture and a natural diet. Biodynamic farming promotes biodiversity and soil health, avoiding the use of synthetic chemicals and GMOs.
  • Harmony with natural rhythms: Biodynamic agriculture is based on the observation of natural and cosmic cycles, using special preparations based on herbs and minerals to stimulate the vitality of the soil and plants.
  • Superior quality and flavor: Demeter meat is recognized for its authentic flavor and high nutritional quality, the result of ethical and sustainable farming.

In short, Demeter certified meat represents a conscious choice for those seeking high-quality products, respecting the environment, animals and human health.

Freshness and Taste Guaranteed

The slices arrive at your home in vacuum-packed packages, maintaining their freshness.

Each pack contains approximately 500 grams of meat, with possible slight variations due to the artisanal processing that preserves the integrity of the product.

Ready to Cook

To best appreciate the flavour and tenderness of the meat, we recommend removing it from the vacuum at least 30 minutes before cooking.

If upon opening you notice a slightly faded color or a stronger odor, don't worry: this is normal due to the lack of oxygen.

Let the meat breathe at room temperature (not exceeding 25 degrees) and you will see its color quickly return to its natural ruby red.

Food container

Store vacuum-packed meat in the lower part of the refrigerator between 0 and 4 degrees (in summer, between 0 and 2 degrees). Always check the expiration date on the label and freeze the meat if necessary.
