The roots of this beer are deep in tradition

Farro was the staple food of Roman gladiators: rich in carbohydrates, fiber, and protein, it was considered the secret to their strength and endurance, the fuel that sustained their training in the games and challenges of the arena. But there's a delicious irony in this bottle: the Romans, who lived on farro, snubbed beer—they considered it the drink of the Northern barbarians, unworthy of a wine-loving people. Dolci Giuseppina is a family-run farm in Monteleone di Spoleto, the highest municipality in Umbria. On land inherited from their grandparents, at about a thousand meters above sea level, the family grows the famous mountain spelt along with barley, ancient legumes, and saffron—a crop that also becomes beer, thanks to collaboration with young Umbrian master brewers in a uniquely regional supply chain.
