Co-sprouting of Italian whole oats and rice with sprouted fenugreek and spring water
The plant-based drink that rediscovers the age-old tradition of sprouted cereals: natural sweetness, sensorial complexity, authenticity

La Organic Whole Grain Oat and Rice Drink of Salvia (Materviva brand) is a refined vegetal wine creation which stands out for a radical and fascinating production choice: the co-sprouting of three ingredients whole oats, brown rice e fenugreek, all organic and of Italian origin — sprouted together with spring water. The sprouting is a very ancient technique seed valorization: by germinating cereals and legumes before processing, activate natural enzymesand increases the bioavailability of nutrientsand reduce antinutrients (such as phytic acid) and converts some of the starches into naturally sweet sugars. The simultaneous co-sprouting of the three ingredients - a peculiar practice of great oenological refinement - gives the drink equilibrium, softness has always been sensory roundness that is entirely characteristic, far from both pure oat drinks (drier) and classic rice drinks (sweeter). In line with the Salvia philosophy, the drink is without added oils, with no added sugar, without additives, gluten free (the oats used come from a certified gluten-free supply chain), vegan (VeganOk certified).
La sprouting of cereals and legumes is one of humanity's oldest food processing techniques, documented in all the great civilizations of the Mediterranean and Asia. The ancient Egyptiansbeyond 5.000 years ago, used sprouted cereals for the production of fermented bread and beer — seeds of fenugreek they have even been found in the tombs of the pharaohs, including those of Tutankhamun, where they were placed as ritual offerings for the journey to the afterlife. Indian Ayurvedic medicine has made sprouts one of its therapeutic-nutritional cornerstones: in the Vedic tradition, the sprouted seed It is considered a “living” food – energetically superior to the dormant seed, capable of providing deep nourishment. Traditional Chinese Medicine has been using it for thousands of years bean sprouts and other legumes both as food and as a remedy. XX century, raw food movement and Western naturopathic nutrition have rediscovered the nutritional value of sprouts, supported by scientific research who have demonstrated how germination increase vitamin content (C, group B, E) of 200-300%, make them more bioavailable minerals such as iron, calcium and zinc, predigest proteins and starches making them more absorbable, dramatically reduce phytic acid and other antinutrients naturally present in raw seeds. fenugreek (Trigonella foenum-graecum) deserves a separate chapter: its botanical name derives from the Latin “foenum graecum” (“Greek hay”) — a plant imported into Italy from Greece in Roman times and always celebrated both as culinary spice (one of the ingredients of the panch phoron Bengali and numerous Indian curry blends) as well as medicinal food with recognized properties to support digestion and metabolic well-being. The Sage Oat and Rice Drink incorporates a small amount of sprouted fenugreek (0,1%) precisely to benefit from these age-old principles.
La co-sprouting brings to this drink concrete nutritional benefits and quantifiable compared to standard plant-based drinks.sprouted oats retains all the benefits of traditional oats — beta-glucans recognized by theEFSA for the reduction of blood cholesterol and the modulation of blood sugar levels — with the addition of a better digestibility has always been greater bioavailability of B vitamins, magnesium and iron. sprouted brown rice brings B vitamins, fibers, Manganese and contributes to natural sweetness of the drink thanks to the enzymatic conversion of starches. fenugreek, albeit in a small percentage, is nutritionally extraordinary: rich in protein (up to 30% of the seed weight!), fibers, Iron, Magnesium, phytoestrogens natural, mucilage (known for their action in supporting the gastric mucosa) and saponin. The nutritional profile of the finished drink is significantly richer of the classic oat drink: 1,6 g of protein per 100 ml (double the amount of pure oat drink), 1,0 g of fiber (more than double), more bioavailable vitamins and minerals thanks to sprouting. A drink authentically nourishing, not simply “vegetable” like many commercial alternatives. Gluten free certified (gluten-free oats + naturally gluten-free rice and fenugreek) = suitable for celiacs. Vegan VeganOk certified, lactose-free, cholesterol-free.
