Viterbo Smoked Bacon Production

It is produced using high quality pork belly, sourced from local farms.

The bacon is cut into thick slices and then salted and flavored with spices such as pepper, juniper and garlic. The bacon slices are then left to mature for a period of at least 2 weeks, in a cool, dry environment.

During curing, bacon loses some of its moisture and develops its characteristic flavor and aroma.

Characteristics of Bacon

Bacon Fumè Viterbese has a bright red color and a soft but compact consistency.

The flavor is strong and tasty, with a light smoked aroma.

 

How to use Bacon

Bacon Fumè Viterbese is a versatile cured meat that can be consumed in different ways. It is perfect as an appetizer or snack, alone or accompanied with fresh bread and a good glass of red wine.

It can also be used to enrich salads, first courses or second courses.

 

 

Some variations

There are different variations of Bacon Fumè Viterbese, depending on the manufacturer. In some areas, for example, wild fennel is also added to the spices, while in others the meat is smoked with oak or beech wood.

 

 

Pasta alla gricia with Smoked Bacon 

Ingredients:

  • 320 g of pasta
  • 150 g of Bacon Fumè Viterbese
  • 100 g of grated pecorino romano
  • black pepper to taste

Preparation:

  1. Cut the Viterbese Smoked Bacon into cubes.
  2. In a non-stick pan, cook the Smoked Bacon over medium-low heat until crispy.
  3. Cook the pasta in plenty of salted water.
  4. Drain the pasta and transfer it to the pan with the Smoked Bacon.
  5. Add the grated pecorino romano and black pepper and mix well to combine everything.
  6. Serve immediately.
