Amphora Viva Puglia Bianco PGI is an organic orange wine born from the blend of three native grape varieties—Moscato, Malvasia, and Verdeca—grown between Jazzo di Stefano and Lama Baronale in Adelfia, Puglia. Its distinctive feature is its winemaking: all stages of production, from spontaneous fermentation to aging, take place entirely in rough terracotta amphorae, as its name suggests. Macerated on the skins for seven to nine days, unfiltered and unclarified, it displays a warm amber-copper color. The grapes come from a thirty-five-year-old espalier vineyard, planted on limestone, clay, and tuff soil, at an altitude of 231 meters. VinNatur-certified and organic, it is the most "alive" and ancestral expression of Cantina Giara's philosophy.
The terracotta amphora is the oldest container for winemaking, used as early as eight thousand years ago in the Caucasus and throughout the ancient Mediterranean: the Greeks, Romans, and Egyptians fermented and stored wine in amphorae. Vinification in rough terracotta, a porous and living material, allows the wine to "breathe" during fermentation and aging, developing complexity and elegance without the aromatic transfers of wood. It is a conscious return to origins, now beloved by natural winemakers worldwide. The presence of Moscato in the blend adds a sunny, aromatic note, while Malvasia and Verdeca bring structure and minerality. Cantina Giara thus combines the ancestral wisdom of the amphora with the aromas of Puglia's grape varieties, creating a truly vibrant wine.
A wine produced through spontaneous fermentation using indigenous yeasts, macerated in amphorae, unfiltered, and organically and biodynamically grown, represents a conscious choice for a more natural and authentic drinking experience. Maceration on the skins and vinification in terracotta preserve and enrich the grape's richness of noble substances, giving this white wine a particularly high concentration of polyphenols and antioxidants. With just 69 kcal per 100 ml, it is also a low-calorie wine. Biodynamic cultivation on calcareous-tuffaceous soil, without synthetic products, guarantees a lively and authentic product. Any residues are natural and testify to the wine's authenticity. Consumed in moderation, it showcases native grape varieties and a millennia-old, sustainable winemaking method.

AGING/REFINEMENT: All stages in 250-litre raw amphora, up to bottling

It has a warm amber-copper color, with the natural haze typical of unfiltered and unclarified wines. Any residue on the bottom is completely natural and testifies to the authenticity of the product.
On the nose, herbaceous and exotic fruit aromas unfold, along with citrus and Mediterranean scrub notes, enhanced by the delicate aroma of Moscato. A complex, fresh, and sunny bouquet.
On the palate, it is fresh, savory, and delicate, with a full, harmonious, and voluminous flavor supported by good acidity. It is excellently drinkable, and the aftertaste is fruity, with a long, pleasant finish.
A vibrant and versatile orange wine, it pairs perfectly with oily fish and seafood, spicy and stringy cheeses, and vegetarian and aromatic dishes. Its savory character, good acidity, and Mediterranean aromas make it an ideal companion to Southern Italian cuisine. Serve chilled at 8°C.
Cantina Giara is a small, family-run winery in Adelfia, Puglia, led by winemaker Giorgio Nicassio. They practice exclusively biodynamic viticulture, using natural, spontaneous fermentation vinification without fining or filtration, and define themselves as "artisans of wine."
